MILD GAZPACHO
3 large tomatoes (I love to use really ripe red and juicy ones)
1 large cucumber peeled
1 medium onion
3 cloves garlic
1/4 cup red wine vinegar
2 tablespoons olive oil
1/2 teaspoon salt
Coarsely chop all ingredients and add to a food processor. Add in vinegar, olive oil and salt. Process until desired consistency. Chill in refrigerator overnight.
