Well, it is time for another week of meal planning! Last weeks new meals that my friend Karen shared with me were really delicious (see Week 7 post HERE)! I will be making the Cheesy Potatoes with Smoked Sausage again and again! That was my favorite meal of the entire week and it was SO good (see recipe HERE).
How was every-ones weekend? Mine was REALLY busy… I sort of hate having back to back plans, but sometimes that is just how it works out.
Friday night was fun, Brian and I had BILLY JOEL tickets (insert squeals!) And, even better… I had NO idea Gavin DeGraw was opening for Billy Joel and he is one of my FAVORITE singers! It really was a fun night, even though we didn’t get to bed until 1 a.m. due to TRAFFIC!
Saturday I was up bright and early… and bushy tailed (yeah, whatever!) for my 8:00 a.m. hair appointment! I made that hair appointment WAY before Brian bought the Billy Joel tickets and it is really hard to reschedule with my hair stylist. At least getting your hair done is relaxing… After she finished my hair, I went to Hobby Lobby to get some boards for a ‘lego land’ I plan to set up in Nathan’s walk-in closet (more details on that later) and then I had Brian take photos of all my Stitch Fix outfits (oh does he love me!). After that, we went to Ace Hardware to get mulch AND pruners… Brian mulched our yard and I trimmed about 15 rose bushes… and they were MEAN a** rose bushes! Remind me to trim my roses sooner next time… geesh. Saturday night we did NOTHING and it was nice.
On Sunday I will be up early, because Nathan has 8:00 and 9:30 a.m choir… then I am going to lunch in Kirkwood with two of my friends and we plan to do a little browsing and shopping in the home decor/gardening stores. Yay! We do this once a year and it is a blast. Anyway, that tops my weekend.

Menu Plan for Week of April 13, 2014:
Sunday – Chinese
I love ordering Chinese every other Sunday! Lazy dinner night = Happy Carrie.
Monday – Hot Cross Buns, Scrambled Eggs & Bacon
Since Easter is THIS next Sunday, we are going to have Hot Cross Buns for our breakfast dinner this week! We will also enjoy some scrambled eggs and bacon to go with it. Pioneer Woman has a recipe for Hot Cross Buns in her new cookbook, but the same recipe is also on her website HERE
Tuesday – Slow-Cooker Ranch Pork Chops with Stuffed Baked Potatoes and Corn on the Cob, recipe HERE
It may be Spring, but I am not putting away the crock pot just yet! I have had this ranch pork chop recipe pinned for awhile (from She Turned Her Dreams Into Plans) and cannot wait to try it.
Wednesday – Tacos
Like I’ve said, we rotate tacos every other week, because the kids love them!
Thursday – Lemon-Ricotta Pasta with Seared Scallops, recipe HERE
I’ve really enjoyed making shrimp for dinner, so I thought it was time to try scallops (one of my favorite meals!). I love how little time it takes to cook shrimp and scallops.
Friday – Red Chicken Chili, recipe HERE
This is my most favorite chili recipe of ALL time… Brian’s too since we were dating and I brought it over to his old apartment for us to make together. 🙂 I found this recipe at a chili cook off at my old work… it is still really weird to call it my old work… I still feel like I am on an extended vacation and I will be back at work any day! Just weird. Sorry, no photo… but, I need to remember to take a photo of it this time! And, I know it is the Spring… but, I love this chili and I need some!
Saturday – Dinner Out
Not sure where yet, but on Saturday we are going to eat out! Yeah!
