This Month's Freezer Meal: Strawberry & Blueberry Burritos

While trying to come up with a recipe for this month’s freezer meal series… I tried to think of something that would be perfect for the month of JULY. These strawberry and blueberry burritos are served just minutes right out of the freezer… a perfect cool treat for this hot and humid month! Even better yet, I served these for dinner one night with oatmeal that I served fresh out of the crockpot (crock pot oatmeal recipe HERE). Yum!

Making_Ingredients
These burritos have very few ingredients, you’ll need:
Strawberries
Blueberries
Dannon Vanilla Yogurt
Cinnamon
Sugar
Spray Butter
Tortillas (the smaller ones)

Making_Spray-w-butter
Spray ONE side of your tortilla with the spray butter

Making_Sugar-Mixture
In a bowl, mix 1/2 cup of sugar with 1 tablespoon of cinnamon. Pour the sugar and cinnamon mixture onto a plate.

Making_Dip-in-sugar
Lay the butter side of the tortilla flat on top of the sugar/cinnamon mixture

Making_Yogurt
On a separate plate, lay down the sugar/cinnamon side of the tortilla so that it faces the plate. Then on the bare side of the tortilla smother some vanilla yogurt to the side of the middle of the tortilla.

Making_Yogurt-and-Fruit
Sprinkle some diced up strawberries and blueberries on top of the yogurt. Roll up your tortilla.

In-the-pan
Once you fill your jelly roll pan full of tortillas, you are done! Place them in the fridge for 15 minutes to ‘flash freeze’ them and then place in the freezer to freeze. Once they are frozen you can place them in a freezer bag together. I used the super soft tortillas and some of my tortillas ripped open in some spots, so you may want to try the regular tortillas (not the super soft ones). Also, once they froze, they stayed together rather well and I thought the little tears in the tortillas made it look even yummier since you can see some of the fruit peaking out.

Crepe-and-oats
To serve, take the burritos out of the freezer and let them sit for 5-8 minutes, then you serve them cold. I served them for dinner one night with some homemade oatmeal from the crockpot, but you could also serve them with eggs and bacon or alone as a snack.
