Dark Chocolate Almond Coconut Cookies Recipe
Ingredients:
1 cup rolled oats
½ cup flour
1 teaspoon ground cinnamon
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
2 whole eggs plus 1 egg yolk
¼ cup melted coconut oil
½ cup unsalted almond butter
½ cup sugar
1 teaspoon pure vanilla extract
1/4 cup coconut
1/2 cup Blue Diamond Whole Almonds, chopped
1/2 cup dark chocolate chips
Directions:
- Preheat oven to 350 degrees.
- In a bowl whisk together the oats, flour, cinnamon, baking powder, baking soda and salt.
- In a separate bowl, whisk together the eggs, coconut oil, almond butter, sugar and vanilla until smooth.
- Add the wet mixture to the dry ingredients.
- Using a spoon, blend the ingredients together until well combined.
- Fold in the shredded coconut, chopped almonds and dark chocolate chips.
- Scoop 2 tablespoons of cookie dough onto a baking sheet.
- Using a spatula, flatten the cookies and shape into round discs. (These cookies do not spread while baking).
- Bake for 8-12 minutes or until golden brown.
- Remove the cookies from the oven and cool on a wire rack.
- Optional: Melt some of the dark chocolate chips in the microwave and drizzle over tops of cookies.
