Hey everyone! Today I wanted to share some of my favorite low carb meals, since I know some of you enjoy doing low carb dinners every now and then. In our household, I typically do low carb on Monday and Tuesdays, which goes with the FASTer Way to Fat Loss lifestyle that I do. I wanted to share some of the recipes I’ve made several times and enjoyed, so that you can enjoy them, too! I know sometimes low carb can be a little ho-hum, especially if you aren’t a huge meat lover like I am. I’m also one that prefers dishes that are quick and easy, yet flavorful.
These Carb Friendly Shrimp & Grits from Lisa at Coast to Coast are DEE-licious! This is recipe that uses a lot of Trader Joe’s products, BUT I was out of my Trader Joe’s mashed cauliflower recently and I did find some at the local grocer that worked out just as nice.
This Low Carb Beer Cheese Soup from 730 Sage Street is a perfect fall dish. Just because it is low carb day, it doesn’t mean you can’t have a creamy soup! Add some air popped popcorn on the side and it’s the perfect warm dish.
This Slow Cooker Low Carb Chili from Peace, Love & Low Carb (she also has a lot of other good low carb recipes!) is really good. It is so flavorful, you won’t even miss the beans!

Another favorite ‘breakfast’ for dinner low carb option is this Crustless Caprese Quiche from Fresh April Flours. This is my absolute favorite low carb quiche right now.
Looking to get in a little healthy fat and protein? Try these Low Carb Peanut Butter Chocolate Fat Bombs from Low Carb Yum. I keep a dozen of these in my freezer and thaw them out for 20 minutes before enjoying one of them.
These Skinny Lemon Ricotta Parfait with Blueberries that I shared last year are the perfect light dessert on low carb day.
Another Trader Joe’s recipe… Trader Joe’s Crispy Sweet Potato Gnocchi Sheet Pan Dinner from The Kitchn. So easy, only 3 ingredients and it is delicious in the fall with the sweet potato gnocchi! Yum!

I use chia seeds ALL the time, I usually add them to my yogurt. I would love to try making this Overnight Chocolate Chia Seed Pudding from Minimalist Baker sometime soon, doesn’t it look delicious?
