Well, even though we’ve been shut in for weeks now… I still have some happenings to share with y’all around here. I also wanted to mention that I will only have ONE blog post next week, on Thursday. The main reason is that I have a lot on my plate… but, I’ll be back the week after that with a few blog posts, so no worries there! Now, let’s get started with Friday Five!

Two – Dalgona Coffee from TikTok

Apparently you can hand whip it at home, but I ain’t got time for that #thankyoukitchenaid. I decided to give this drink a try and was pleasantly pleased with it!
Here is how I made it:
Dalgona Coffee (2 Servings):
Mix 1/4 Cup Instant Coffee, 1/4 Cup Water and 1/4 Cup Sugar in your KitchenAid (or whatever mixer you have) at high for 3-4 minutes until a peanut butter/fluffy mixture forms.
In 2 glasses, fill halfway with ice and add 8 oz of milk to each glass.
Add half of the fluffy coffee mixture to each glass.
STIR it up really well, or it’ll be better. We like to top it with chocolate syrup and whipped cream. SO good!
Three – CBS Bible Study
One of my goals this year was to sign up for the CBS Bible Study. I didn’t even know it existed until Lisa from Coast to Coast shared a little bit about hers on her IG Stories. What I love about CBS is it focuses on a few books of the bible each year and you really go in deep with it and learn SO much through the workbooks and weekly discussions. I was put into a small group of 15 and I thought I would be the youngest one in the group by 20 years, but there was one lady younger than me in our group (she’s not in the photo! lol!). It’s been such a great experience and I recommend it if you’re looking to learn more about scripture. My group started with Daniel and now we’re wrapping the year up with Revelations.
Since the whole Covid-19 outbreak, we’ll be using Zoom for our small group meetings until we can meet in person again. It’s been nice to be able to close out this year still, even if it is virtual!
Four – Latest Shows and (gasp!) a JigSaw Puzzle!
SOO. Last time I did a Friday Five, I had read 5 books in one month. This month? I got nothing! But, my husband and I finished a 2,000 piece puzzle! I swear… if I’m ever in a nursing home bored to tears, I’ll be able to keep myself entertained with jigsaw puzzles! They’re that fun! The kids helped a little, too! And, you gotta love this family photo Autumn took of us all. LOL. She’s the clown of the family, for sure.
Since I don’t have any new books to share, I do have some shows to talk about that we’re watching/watched. We’re currently watching the third season of Mrs. Maisel, which is SO good. We also started Tiger King, but we’re only one episode in. We watched a couple of documentaries about health and vegetarian lifestyle that were quite interesting, too. Healthy eating is sort of something I love reading/learning about right now- kind of a weird hobby! LOL. These are the documentaries we’ve seen:

This documentary is about how researches explore the possibility that when people change their diets from animal-based to plant-based, they can help eliminate or control diseases like cancer and diabetes.
Five – A Glimpse into Online Schooling
And, I just wanted to share a little glimpse into online schooling at our house right now. The kids both set up a space in their room and this is where they’re at from about 8 a.m. till noon working on their assignments. Then we have lunch and they have the afternoon to relax… we usually take a walk if the weather is nice. In the evenings we have dinner and Nathan has his karate classes on Facebook Live and Autumn has some dance classes on Zoom. My has life changed!!! Their last day of ‘virtual’ school is May 15 and… sadly, Nathan won’t get to walk those halls with his classmates one last time. 🙁 But, it is what it is… I had my big ugly cry and now it is day to day life and staying upbeat for these kids! Thank goodness online school is an option these days, I can’t imagine what it’d be like if they had to make months of schooling up!! How is online schooling going for those of you with kiddos and teens?
Let me close out saying that I hope everyone had a wonderful Easter, even though it wasn’t the norm! We cooked a nice brunch at home with Brian’s incredible homemade cinnamon rolls, I made an egg casserole with sausage, cheese and hash browns and my strawberry poppyseed spinach salad. We washed it down with mimosas. We dropped off leftovers to my parents, which they appreciated.
