Today I’m sharing how to make Lemon Curd Glazed Blueberry Pancake Bites using Krusteaz Buttermilk Pancake Mix. These are a nice sweet treat with eggs, bacon and sausage! They can also be freezed, served as an easy snack or they’re perfect for breakfast on the go!

How to Make Lemon Curd Glazed Blueberry Pancake Bites
This recipe is so easy and the blueberry bite sized pancakes are so delicious with the lemon curd glaze on top!
You’ll Need:
- 3 Eggs
- 1 Cup Granulated Sugar
- ¾ Cup Juice from 4 Large Lemons
- ½ Cup Butter
- Crate of Blueberries
- Krusteaz Buttermilk Pancake Mix
Squeeze the 4 lemons to get 3/4 cup of lemon juice.
Mix the eggs, sugar, lemon juice and butter together on medium heat until melted and thickened. Cool for 10 minutes and then blend in a food processor until the texture is smooth. Cover and place in refrigerator to chill.
Prepare the Krusteaz pancake mix batter according to instructions.
Line your mini muffin pan with mini muffin liners. Spray with PAM. Insert 2 blueberries into each empty mini muffin liner. Fill mini muffin liner 1/2 full with pancake batter (you won’t need a lot)!
Bake in oven at 350°F for 10-12 minutes.
Cool for 15 minutes, then dip each pancake bite upside down into lemon curd. You’ll want to refrigerate any pancake bites with lemon curd on them or any leftover lemon curd.
