So, we’ve decided that Disney is kinda expensive and we’re going to try and go with the kids every other year… because, you can’t do EVERY vacation at Disney, can you?! Earlier this week I contacted Stacey Burns, the BEST Disney vacation travel agent ever (you can contact her by clicking HERE) to set up our next trip! Stacey is great, I know so many people that use her and she really does help you set up the best trip and the best price possible for you!
When we went with the kids last time, they were 4 and 7! This year when we go they will be 6 and 9… I am getting a little nervous about my big boy turning to double digits in the near future. I think 6 and 9 will be perfect ages, although 4 and 7 weren’t bad either… but, we won’t need a stroller this time and both kids will probably do better with staying up late to see fireworks and the Fantasmic show.
Last time we stayed at Animal Kingdom Lodge and had a Safari View with animals right outside our balcony! This time we decided to stay at the Beach Club Resort, which our travel agent recommended. We are staying 5 nights this time instead of 4… because, 4 days in a row of parks almost killed me! This time we’ll do 2 days of parks, a rest day at the hotel and then 2 days of parks. The Safari View hotel that we will be staying at is supposed to have the best pool at Disney, with sand at the bottom of all of the pools and even a beach! There is also a pirates water slide! This hotel is in walking distance to Hollywood Studios and Epcot!
We are also getting the dining plan, which will include all our meals during our stay. We have found that this gives us more then enough food, that we get to make reservations at some of the nicer restaurants WAY in advance and it actually saves us money in the long run. We are also doing Disney transportation, because Brian and I didn’t do that when we went sans kids in 2012 for the Wine and Dine Half Marathon and we SO regretted it!
So, here is our sort of mini-schedule so far and the restaurants and activities we have planned. I already picked out the color for our wrist bands and we can plan out our Fast Passes 60 days before we leave! Woohoo!

Autumn has dance, so it is frozen pizza night!
This is another freezer meal I am going to thaw out and make this week… so easy! Last year I did a freezer meals series and it left me with a lot of great quick and easy meals in my freezer.

Pork chops are always easy and I made these rosemary thyme vegetables last week and have a half bag of potatoes left over (and Autumn LOVED them), so we’ll have some yummy vegetables with the pork chops.
