Well, it is that time again… time for me to share another freezer meal with all of you! I thought long and hard about what to do this month… and, I decided upon a delicious desert I have made several times that is perfect for the hot days of August. Ok, well, maybe it hasn’t been THAT hot this August (polar vortex anyone??)… but, I thought I’d share a recipe that I got from my friend Janna. Chocolate & Peanut Butter Ice Box Pie! Oh, and it has bananas in it, too… but, I thought that would make the name WAY too long. (My husband hates bananas and then he wouldn’t eat it. Shhh!) If I leave the banana word off the name, he eats it and loves it and everyone is happy!
Also, I wanted to mention that you will see TWO more months of this Freezer Meal series and then I will be announcing the NEW theme for the month… as much as I love Freezer Meals, I would also love to move on to something different.
The only items I had to go out and buy for this pie were the bananas (it needs two, for some reason I only put one of the bananas in this photo).
There are THREE steps to this pie:
Step 1:
The make the crust, mix the flour and sugar with the melted butter in a bowl. It will have the texture of wet sand, press into a pie dish. Refrigerate for 30 minutes.
Step 2:
Mix the ingredients for the peanut butter filling together. Pour peanut butter filling on top of crust. Freeze for 1 hour.
Step 3:
Mix ingredients together for chocolate layer. Spread on top of peanut butter layer and freeze for 1 hour.
Pull it out of the freezer and drizzle some white powdered sugar & chocolate on top… and you have yourself a delicious slice of pie!
This pie seems to taste better and better the longer it is out of the freezer… but, it will melt… so, don’t eat it too slowly (if that were possible!).
If you are craving something cool to eat after you come in from the pool on these hot August days, then you have got to try this easy ice box pie!
And, for a little flash back… here are my two cuties the first time we made this pie together. Wow, I haven’t seen a sippy cup in years… They are growing too fast!
Chocolate and Peanut Butter Icebox Pie
Easy to make, and no baking required!
Crust:
1 ¾ cups flour
¼ cup melted butter (I had to use an extra tablespoon to get the right consistency)
2 tablespoons sugar
Peanut Butter Filling:
½ cup peanut butter
¼ cup 2% milk
1 large ripened banana
Large pinch of salt
(optional) sweeten with sugar to taste
Chocolate Top Layer:
1 large ripened banana
½ cup 2% milk
4 tablespoons cocoa powder
2 tablespoons sugar
Small pinch of salt
Mix the crust ingredients together, they should have the texture of wet sand. Press into a nine-inch pie tart and chill in the refrigerator for at least 30 minutes while you prepare the peanut butter filling.
Blend or whip together the ingredients for the peanut butter filling. Pour into crust, and return to the refrigerator or freezer for an hour to set up before adding the top layer.
Blend all of the ingredients for the chocolate layer together until smooth. Pour over the peanut butter layer, and return to the freezer until the pie is set, another hour or so.
Grab some forks and share with your loved ones, preferably straight out of the pan before it melts.
