Not too much happened this weekend. I got a cold (it is June, I shouldn’t be getting sick!) and my laptop also stopped working properly so Brian came home with a new MacBook Pro for me. I was feeling so awful, though… that I didn’t really get to enjoy the MacBook Pro. I am used to PC’s, so this is a huge change for me… eek. I am really enjoying my new Mac, tho!
We are leaving for NYC SOON, so at least I am sick now and I’ll be better in time for our trip. Since I booked our NYC trip SO late, I feel sort of unprepared… We booked tickets to see Phantom of the Opera on Broadway and we also have a foodie tour in China Town/Little Italy… but, that is all I’ve prepared so far for the trip. I haven’t even figured out outfits. Sigh. So, I need to work on that and SOON.
Brian and I celebrated our ‘dating anniversary’ at Vin de Set, which is a roof top restaurant this weekend, too! Luckily I was feeling better by Saturday evening and it was a beautiful evening with NO humidity! We really lucked out!
We also celebrated Father’s Day this weekend. Brian got some Under Armour clothing and a new pair of New Balance shoes. 🙂 I am so thankful to have Brian, he does so much for Nathan and Autumn and has been a great Dad to them. He definitely goes above and beyond and it really shows! We also went to brunch at Balabans with my parents, brother and SIL. I tried my first EVER bloody mary and I did NOT like it! I have never had trouble finishing an alcoholic drink before, but this one was terrible! Not sure if it was the bartender or just me!

Menu Plan for Week of June 17, 2014:
Sunday – Grilled Bacon & Shrimp Salad, recipe HERE
We didn’t make this on Friday, SO… it is what’s for dinner on Sunday! We are going to a brunch for Father’s Day, so a light and easy dinner will be perfect. Brian is going to grill the jumbo shrimps I bought on the grill tonight. yum.
Monday – Spaghetti with Salad and Homemade Rolls
Nathan isn’t a big fan of spaghetti, but Autumn loves it. I MIGHT make this with meatballs, because Nathan does love meatballs. Brian is the bread master around here, so he will be making the rolls!
Tuesday – Pancakes, Scrambled Eggs & Bacon
We haven’t done a simple breakfast for dinner in awhile, so this will be something everyone will enjoy.
Wednesday – French Bread Pizza with Salad, recipe HERE
This always seems to be a huge hit with the kids, so I am making it again. Autumn has gymnastics on Wednesday, but this whips up so quick in the oven that we’ll have dinner done in no time.
Thursday – Honey BBQ Pork Chops with Green Beans and Corn on the Cob, recipe HERE
Friday – 54th Street Grill To Go
We will be packing and going to bed early (flying to NYC in the morning!), so we will just get our usual (soup/salad or salad/baked potato) combo from 54th Street Grill to go. I also always get one of their Cherry Limeades to go, they are SO good (better than Sonic even!).
Saturday – Dinner Out
We will be in NYC, so we will be having dinner out somewhere… since I am really unprepared for this trip, I really have no clue where we will be dining. But, I am sure it’ll be tasty wherever it is…!
