I decided to join a group of bloggers in a little St. Patrick’s Day recipe swap! The recipe that was selected for me to try out and make was Solis Plus One’s Thin Mint Cookie Bars! I will admit, I was worried when I saw that her recipe needed a box of THIN MINTS! I had no thin mints and I did not know at that time that Keebler makes a cookie similar to Thin Mints. BUT, alas… my HUSBAND has been hiding a stash of Girl Scout cookies in our very own house! AND, he whipped out a box of Thin Mints faster than I could blink.
Ingredients:
20 mint Oreos
6 TB melted butter
1.5 sleeves Thin Mints, chopped
1 cup semi-sweet chocolate chips
14 oz sweetened condensed milk
Place the Oreos in a good processor and pulse until they are fine crumbs. Then, in a bowl, stir the Oreo crumbs into the melted butter. Press into the bottom of a baking dish.
Layer the chocolate chips on top of the Oreo crumb mixture.
Then, put the thin mints in a food processor and pulse into they are fine crumbs. Layer on top of the chocolate chips.
Evenly pour the sweetened condensed milk over the cookies. Bake 30-40 minutes until the edges are golden and bubbly.
AND, if you are me… you’ll snack on the leftover Mint Oreos while it bakes!
